Already owner of one michelin star, chef Martini is probably one of the most talented and experienced young Italian chefs. This is one of his most famous dishes: cod, patanegra and bitter orange, garnished with sea asparagus (salicornia) and red cabbage foam. Dear Chef, best of luck for the new adventure.
