La Maddalena, Sardinia (Italy) / Fregola with mussels, shrimps and lobster claws

As I often repeat when prompted about the topic, the secret to make great food is generosity: generosity on the variety of ingredients, generosity in their quality, generosity sometimes in their quantity, generosity in the flavours.

A fregola generously prepared has a base of mussels, shrimps tails and lobster claws that has been gently cooked with garlic and abundant olive oil, a bisque made out of the heads of the freshest red prawns, a boiling salty water mixed with the juices released by the mussels, the love of a father welcoming his son living abroad and his friends with the best Sardinia has to offer.
