Puno | La Table del Inca: Canadian trucha and European twists


What is trout doing in every single restaurant menu in Puno? How this Canadian fish became the most important fish of the lake?

Well, ask the Americans! In the 1930s, a United States fish and wildlife official recommended to introduce trout eggs in the lake to provide food supplies and economic opportunities. The trouts responded to the invite invading the lake and replacing native species.

As a result, today they are the main ingredient of the local ceviche, as the one served at La table del’Inca: French restaurant introducing Europe twists to Peruvian dishes. Couple of examples: quinoa risotto and lomo saltado with red wine!
